Roasted Broccolini with Bell Pepper Confetti

Recipe by Baby Broccoli or what they also call, Broccolini is one of my favorite vegetables to roast on on the Silpat. The broccoli is picked before it has fully matured, making it thinner and more tender. It's the best and everyone in my family enjoys this incredibly healthy vegetable and I'm sure you will too!   • 1-2 bunches of broccolini
  • Orange or yellow bell pepper
  • DAH Sweet Basil Olive Oil Blend
  • DAH Sel Gris Sea Salt
  • DAH Barrel-Aged Tradional Balsamic Vinegar
  • Grated parmesan cheese, optional


1. Preheat oven to 400' Place Silpat on Perforated Baking Sheet. Wash, dry and remove small leaves from the broccolini. Trim very end of stalks as well, just a little bit.

2. Mince approximately 1/4 cup of the bell pepper. Place broccolini in a mixing bowl and drizzle slightly with Sweet Basil Olive Oil Blend, tossing to evenly coat. Arrange broccolini on your Silpat. Place in preheated oven for 8 mins.

3. Meanwhile, put the minced bell pepper in the same unwashed bowl and toss with the remaining Sweet Olive Oil Blend. When the 8 mins is over, sprinkle minced bell pepper on top on the broccolini and bake for an additional 8-12 minutes, until tender, but still firm.

4. . Pour approx. 5 Tbs. DAH Barrel-Aged Traditional Balsamic Vinegar in a small saucepan. Heat vinegar on low temperature for 2-5 mins or until reduced. ( it will appear thicker and more concentrated)Remove broccolini from oven, sprinkle a bit of DAH Sel Gris Sea Salt on the top and drizzle with the reduced vinegar. Sprinkle with grated parmesan cheese, if desired. Serve immediately.
