Roasted Chicken Legs

  • 1 whole chicken or legs
  • 1 can black olives
  • 2 tablespoons capers
  • 3 cloves garlic, minced
  • 2-3 bay leaves or fresh rosemary
  • Salt and Pepper, to taste
  • 2 tablespoons Sweet Basil Olive Oil Blend
  • 1 tablespoon dry oregano
  • 1/4 cup dry white wine
  • 1 tablespoon chopped parsley


1. In Mixing Bowl, combine garlic, olives, capers, olive oil, bay leaves, oregano, salt and pepper. Mix well. Add chicken pieces and stir to coat. Cover and refrigerate overnight. This step is optional is you want to marinate.

2. When ready to prepare, preheat oven to 350 degrees F and place oven rack in center position. Remove mixing bowl from refrigerator. Place the Flexipan® Grande Round Mold on the Perforated Baking Sheet and pour mixture into mold.

3. Pour white wine over chicken. Cover with Square Silpat to lock in moisture. Bake in preheated oven for 1 hour, spooning juices over chicken several times as its baking. Serve on a platter, pour juicing over top, and garnish with fresh parsley.
