- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, diced
- Olive oil and balsamic vinegar to taste
1. Preheat oven to 400 degrees F and place Silpat on Perforated Baking Sheet and set aside.
2. Cut vegetables and toss in olive oil. Spread onto Silpat and drizzle with balsamic vinegar and salt. Roast in oven for 15-17 minutes depending how you like your vegetables cooked!
