Roasted Salmon & Vegetables


  • 3 tablespoons extra virgin olive oil
  • 3 teaspoons Fresh Dill and Lemon Herb Blend
  • 1 salmon fillet, skinned
  • Pinch of Sel Gris Sea Salt
  • Pinch of course ground pepper
  • 2-3 lbs small red skin potatoes
  • 1 bunch asparagus spears, end trimmed
  • Cherry tomatoes and olives if desired
  • 1 1/2 tablespoons Dijon mustard
  • 1 1/2 tablespoons superfine sugar
  • 2 tablespoons white wine vinegar
  • 2/3 cup extra virgin olive oil
  • 1 tablespoon minced fresh dill


1. Preheat oven to 400 degrees F and place oven rack in center position. Place Grande Flexiflat on Perforated Baking Sheet and set aside. Season oil with herb blend. Baste salmon with 1/3 oil mixture using Silicone Pastry Brush and season with salt and pepper. Place onto Grande Flexiflat.

2. Boil potatoes until al dente (firm but not hard). Rinse in cool water using Colander Scoop. Place in Mixing Bowl and add asparagus and tomatoes. Top with remaining seasoned oil and toss.

3. Position the potatoes on Flexiflat, place asparagus in center with tips toward the top like a bouquet and place tomatoes at asparagus tips like flower heads. Place in oven for 15-20 minutes or until salmon is slightly crisp on the outside with a moist and flaky center.

4. Be careful not to overcook the fish - salmon is done when it can be flaked apart in the center and has a nice pink color inside. Combine mustard, sugar, vinegar, olive oil and dill in a small bowl. Top fish and vegetables with dressing and serve.
