Roasted Squash, Sweet Potato, and Apples

Recipe by Thanksgiving

Ingredients:


  • 4 large sweet potatoes
  • 2 butternut squash
  • 4 granny smith apples
  • 2 Tbsp Demarle at Home Sweet Basil olive oil
  • 2 Tbsp Roasted Garlic and Chive
  • 2 Tbsp Roasted Onion and Red Pepper
  • Salt and pepper, to taste

Directions:


Preheat oven to 400 degrees.

Cut squash in half and core out center with seeds.

Peel both sweet potatoes and squash; cut into 1” size (approx.) cubes.

Put cubes in Large Round Mold with Octagonal Silpat on top and microwave for about 6 minutes; may have to do 2 batches to fit.

Slice apples and cut into small pieces.

Toss sweet potatoes, squash and apples in Stainless Steel bowl with Sweet Basil Olive Oil.

Spread out all ingredients on Flexiflat or Large Silpat, with Perf Baking Sheet underneath

Sprinkle with both herb blends, along with salt and pepper

Bake for approximately 30 minutes. Serve hot!
