Roasted Veggie Pasta

Recipe by This recipe is adapted from Forks Over Knives and was posted on Facebook by my nephew who has resolved to cook more in the new year. It looked/sounded delicious to me so I used DAH ingredients and added the mushrooms. Perfect for my vegetarian husband who prefers pasta without oil. Nancy Craig, Product Focus Group Member

Ingredients:


  • 1 pound pasta (I used tricolor Rotini)
  • 1/2 large red onion, chopped
  • 2 medium carrots
  • 1 pint tiny tomatoes
  • 1 medium zucchini
  • 1 carton sliced mushrooms
  • 1 pound eggplant (I left out)
  • 1/4 teaspoon DAH Sel Gris Sea Salt
  • 2 1/2 tablespoons fresh thyme
  • 3 cloves garlic
  • 2 tablespoons lemon juice
  • 3 tablespoons DAH Traditional Balsamic Vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon red pepper flakes
  • salt & pepper

Directions:


Preheat oven to 425 and place Deep Flexiflat on the Perforated Baking Sheet. In a large bowl, throw in red onion, carrots, tomatoes, mushrooms, zucchini, eggplant, and salt. Mix until everything looks coated. Spread veggies out on the Flexiflat and place in the oven.

Roast for 15-20 minutes, then take them out, add the thyme, garlic, and lemon juice; stir, and put back in the oven until some of the veggies start looking a little browned around the edges, 10 to 15 minutes longer.

While the veggies are roasting, cook the pasta according to the package directions. Drain and put it back into the pot.

Add the roasted veggies to the cooked pasta, pour in the balsamic, pepper flakes, a pinch of salt and black pepper, and stir. Taste and add more garlic, balsamic, lemon juice, and/or thyme if needed. If you want to up the greens level, serve the hot pasta on a bed of arugula or spinach with a squeeze of lemon juice on them.
