Salted Oatmeal Butterscotch Cookies

Ingredients:


  • 1 1/2 cups oatmeal
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 4 tablespoons butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 1/2 cup butterscotch chips
  • Sel Gris Sea Salt for garnishing

Directions:


1. Preheat oven to 350 degrees F and place oven rack in center position. Place Silpat on Perforated Baking Sheet and set aside.

2. In small saucepan, cook butter over medium heat until it darkens and begins to smell nutty. Remove from heat and cool.

3. In Mixing Bowl, combine oats, flour, salt and baking soda. In a smaller bowl, whisk butter, egg, vanilla and brown sugar until sugar has dissolved. Add to flour mixture and add butterscotch chips. Mix well.

4. Spoon cookie dough onto Silpat in similar size shapes and sprinkle the tops with sea salt. Bake for 12 minutes or until golden brown around edges. Cool before serving.
