Sausage Breakfast Burritos

Recipe by Our daughter-in-law makes these for our son to take to work and eat after he works out at the gym in the morning. Another Every Day Easy and healthy option. By GalleyCook

Ingredients:


  • 12 eggs, whipped
  • ½ lb sausage
  • 2 to 3 cups spinach
  • ½ cup shredded cheese
  • package of six large tortillas

Directions:


1. Preheat oven to 375 degrees. Brown and drain sausage in stove top frying pan, then add chopped spinach. Cook until spinach is wilted. Spice to taste. Place mixture into Deep FLEXIFLAT on Perforated Baking Sheet.

2. Spread cooked sausage/spinach mix evenly in FLEXIFLAT. Whisk eggs and pour over sausage mix. Bake in oven 15 minutes @ 375 deg. Remove from oven when the eggs are cooked and sprinkle shredded cheese on top. Let cool.

3. Cut into 6 equal strips with nonmetallic knife. Wrap baked egg and sausage mix strips in Tortillas. Cut in half and individually wrap in plastic wrap. Freeze for a quick breakfast reheated in the microwave later.
