Savory Sweet Potato Meatloaf

Recipe by This is a family favorite! And its Paleo! So healthy AND delicious! This recipe was adapted for Demarle use, from Juli Bauer's "OMG That's Paleo?" cookbook.


  • 2.5 lbs ground beef
  • 1 sweet potato or yam, shredded
  • 1 onion, finely chopped
  • 1 lb. uncured bacon, diced
  • 1 cup almond flour/meal
  • 2 eggs
  • 1/2 cup chopped dates
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • salt and pepper, to taste


Preheat oven to 400 degrees. Put bacon in deep skillet and begin to cook down. Once the fat has begun to render, add the chopped onions and dates to the pan. While those ingredients are cooking together, shred the sweet potato and place in a large bowl. Once the bacon is cooked through and the onions are slightly translucent, add them to the large bowl with the shredded sweet potato, along with the beef, almond meal, eggs, and all seasonings. Mix all ingredients thoroughly together, then press meat in to the Square Savarin tray and bake for about 25-30 mins. (I love using this tray because they cook quicker and are portioned out already, and the kids love filling the well with ketchup! But you can use any mold or tray, of course!). You will have some extra meat. I like to put it in another mold and bake that as well, then stick in the freezer for another meal at another time!
