Southwest Egg Cups

Ingredients:


  • 1 dozen eggs
  • 1 10 oz can of enchilada sauce
  • 2 cups of grated cheese-we used cheddar
  • black beans, drained
  • 12 4-inch corn torillas
  • chopped fresh cilantro, chopped green onions, chopped tomatoes, sour cream, salsa

Directions:


Preheat oven to 350 degrees.

Soften tortillas in the microwave until soft and flexible. Press into the straight muffin tray.

Add one TB of enchilada sauce into the bottom of each tortilla cup

Add about 1 TB of grated cheese

Crack an egg on top of the sauce and cheese and top with one TB of black beans

Season with salt and pepper and top with and addition 1-2 tsp of enchilada sauce

Bake for 20 minutes

Top each cup with salsa, sour cream, cilantro, green onions and avocado.
