Spiced Roasted Cauliflower

Recipe by Even my husband, who hates cauliflower, loves this! The spices smell so good when it's roasting. Goes over great with company but easy enough for every day. Vegan, low carb. Ingredients:


  • 1 head Cauliflower cored and broken into bits
  • 1/4 C. Demarle at Home Cilantro Olive Oil or regular olive oil
  • 1 t. Cumin
  • 1/2 t. Spice for Life Turmeric
  • 1/2 t. Crushed Red Pepper
  • Bolivian Rose Sea Salt
  • 1/4 C. Slivered Almonds
  • 1/8 C. Currants (optional)

Directions:


- Heat oven to 400- Blend the oil and spices in a large bowl, except for the salt- Stir the cauliflower into the bowl and stir to coat (can also shake in a plastic baggie)- Arrange on the Deep Flexiflat and perforated baking sheet in a single layer, and sprinkle with salt- Roast for about 40 minutes until browned- In the last 5 minutes, move the cauliflower over slightly to one edge and place the nuts on the tray, return to the oven for 5 minutes to toast the nuts- Let rest and combine. Add currants if desired.
