Strawberry, Balsamic & Goat Cheese Crostini

Recipe by Quick and easy appetizer that will definitely impress your friends! Cindy Bechtholdt, Product Focus Group Member

  • 1 baguette (long and thin)
  • 1 pint fresh strawberries
  • 1 log goat cheese
  • 2 T. Dark Chocolate Balsamic Vinegar
  • Sweet Basil Olive Oil (enough to drizzle on bread)
  • Salt & Pepper

Preheat oven to 400 degrees F. Place your Silpat or Silpain onto the Perforated Baking Sheet and set aside. I used the Silpain. Wash and dice the strawberries. In a bowl, pour 2 T. Dark Chocolate Balsamic Vinegar over your chopped strawberries and let them set for at least 10 minutes (more if you prefer). Slice baguette in half inch pieces, drizzle with the Sweet Basil Olive Oil and place in oven on the Silpat for about 5 minutes or until edges start to turn golden brown. Remove and let cool. Top the crostini with goat cheese and spread evenly. Sprinkle with chopped basil. Add a small spoonful of the balsamic strawberries to each. Finish off with a pinch of salt (I used the Bolivian Rose Sea Salt) and cracked pepper (to taste) and drizzle with some additional Dark Chocolate Balsamic Vinegar!
