Stuffing with Celery

Recipe by Thanksgiving

Ingredients:


  • 3/4 cups unsalted butter
  • 4 cups finely chopped yellow onion
  • 2 cups finely chopped celery, including some leafy tops
  • 2 10 1/2 oz French baguettes, plus half a loaf of bread slices
  • 6 cups chicken stock or broth
  • 1/2 cup minced fresh flat-leaf parsley
  • 2 Tbsp French Pantry Roasted Garlic and Chive Herb Blend
  • 2 tsp French Pantry Pot Herbs Herb Blend
  • Salt and freshly ground pepper

Directions:


Preheat oven to 325 degrees. Set Flexipan mold (or tray) of your choice on a Perforated Baking Sheet. Set aside.

In a large frying pan over medium heat, melt butter. Add onion, celery, and herb blends. Cover and cook, stirring a few times, about 15 minutes or until tender. Remove from heat and let cool to room temperature.

Cut baguette into quarters. Using Kitchen Scissors, cut each quarter into 1" cubes. Repeat for sliced bread. Combine bread and onion mixture.

Whisk in stock/broth. Add parsley, 1 tsp salt, and 1 1/2 tsp pepper. Stir well, breaking down bread cubes until soft.

Spoon stuffing mixture into Flexipan mold or tray of choice. We like to make one large stuffing in a mold and one tray for individual-sized stuffing.

Cover with a Silpat and bake for 45 minutes. Uncover and continue baking for about 30-35 more minutes, until stuffing is lightly browned on top and very browned on sides. Serve hot!
