Sugar Cookies

Recipe by My favorite cookies to make for the holidays and birthday parties. So easy to make ahead and freeze, just bake when I am ready! So light and delicate and last for a good two weeks when iced with royal icing (if my family doesn't eat them first). Posted by: Katie Merritt.

Ingredients:


  • 8 oz. white sugar
  • 12 oz. butter, room temperature
  • 18 oz. white pastry flour
  • 1 tsp. vanilla extract
  • 1 egg, room temperature

Directions:


Begin with all ingredients at room temperature. Use a stand mixer to cream the sugar and butter until smooth in texture. Slowly fold in pastry flour, then add vanilla extract and egg. Let dough rest, lightly flour the Roul'Pat and roll out the dough to 1/8" thickness, cut into desired shapes or simply use the cake knife to cut into squares. Place the scraps to the side in a pile while cutting shapes, re-roll the scraps only once to avoid tough cookies. Place cut dough on Silpat and bake at 350F until slightly golden around edges, about 8 minutes.You may also cut the dough, place unbaked cookies on the Silpat and freeze. Once frozen stack the cookies in a sealed plastic bag. When you are ready to bake the cookies, place on Silpat and bake for 12-14 minutes at 350F. No need to thaw before baking.To decorate ice with royal icing or frosting.
