Super Healthy Muffins

Recipe by No butter, no added sugar, and no flour. Baking doesn't get any healthier than this! They slide right out of the tray so beautifully and are so incredibly moist! By Michelene Newman Barton

Ingredients:


  • 3 mashed ripe bananas, 1/4 cup almond butter, 1/2 cup prunes blended to a paste with 1/2 cup water, 1 egg,
  • 1 1/2 cups regular oats (blend about 2 cups to make oat flour then measure) 1 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt
  • 1/2 cup chopped pecans and/or 1/4-1/2 cup "dark" *chocolate chips or shavings *(optional)

Directions:


Preheat oven to 350 degrees. Place Straight Muffin Tray on Perforated Baking Sheet. In DAH Stainless Mixing Bowl mix wet ingredients together and then add to dry ingredients. Using the DAH Go-To Spatula fold in the pecans and dark chocolate, if desired. Omit chocolate chips to keep these sugar free. Fill each well full, as they will not rise very much at all.
