- 1 large sweet potato
- 2 tbls orange juice
- 1/2 tsp sprice for life coriander
- 1/4 tsp spice for life ginger
- 1/4 tsp spice for life cinnamon
- 1/8 tsp spice for life fennel
- 1/2 tbls olive oil
Cut potato into uniform pieces and add to stainless mixing bowl. Drizzle the orange juice over the potatoes. Coat with olive oil. Mix in the coriander, ginger and cinnamon. Preheat oven to 425 degrees and arrange potato on a medium silpat and perforated baking sheet. Crush the fennel and sprinkle on top of the potato. Roast for 25-30 minutes or until done. Drizzle with balsamic if serving with a meal or top with whip cream if eating as dessert!
