Three Cheese Spaghetti Frittata

Recipe by This a family favorite and so great to make when you have that leftover spaghetti in the fridge! You can serve it as a main dish with a side salad or as an accompaniment to chicken, fish or lamb! Substitute any veggies you like or omit the olives if your not a fan but seriously...this is so good just the way it is! And of course turns out so well and pretty in any of the Demarle Flexipan molds! By Michelene

Ingredients:


  • 1/2-3/4 pound spaghetti, 2-3 Tbs. DAH Sweet Basil Olive Oil, 1 small onion thinly sliced
  • 5 garlic cloves coarsely chopped, 16 kalamata olives, pitted & sliced, 16 cherry tomatoes, halved. handful of fresh spinach leaves
  • 4-8 large eggs, (depending on how many people your serving) 1 Cup heavy whipping cream or 1 Cup half n half
  • 2 tsp DAH Sel Gris Sea Salt, ground black pepper, 1 tsp. red pepper flakes, optional, 6 fresh basil leaves, chopped
  • 1/2 Cup fontina cheese grated, 1 Cup feta cheese crumbled, 1 Cup Parmesan cheese shredded

Directions:


1. Preheat oven to 350 degrees F. Cook pasta according to directions, drain and rinse under cold water. Return to the pot and set aside.

2. Heat 2- 3 Tbs. DAH Sweet Olive Oil Blend in Demarle Difference Stainless Fry Pan for 1 minute. Add the garlic and onion and sauté for 3 minutes. Add the tomatoes, kalamatas, 1 tsp of the sea salt and a few grinds of black pepper.

3. Cook for approx 5 minutes or until the tomatoes start to break down. Remove from heat and stir in the handful of fresh spinach leaves and let sit.

4. Using the DAH Whisk...in the DAH Stainless Mixing Bowl, whisk together the eggs and cream. Add the remaining Sea Salt, a few grinds of black pepper, the crushed red pepper flakes, basil, fontina, feta, half of the Parmesan cheese and all of the tomato spinach mixture.

5. Lastly, stir in the cooked, cooled spaghetti. Place Flexipan Mold of your choice (I used the Sunflower Mold here) on the Perforated Baking Sheet. Pour the spaghetti mixture into the mold. Then using a DAH Go-To Spatula, gently push any spaghetti pieces sticking up, down into the egg cheese mixture to even out. Bake for 35-40 min or until middle is set and edges appear browned. Cool about 10 minutes, unfold and sprinkle with reserved Parmesan cheese.
