Vegan Chocolate Cake

Recipe by Adapted from original recipe from instructables.com This is hands down the most delicious, moist WONDERFUL cake!!! Happy Cooking, Baking and Making...a MILLION smiles!


  • Cake:
  • 2 1/2 cups flour, all purpose, unbleached
  • 2 cups sugar
  • 2/3 cup unsweetened cocoa powder
  • 2/3 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 cups warm water
  • 2 teaspoons vanilla extract
  • 2/3 cup vegetable oil
  • 2 teaspoons apple cider vinegar
  • Chocolate Glaze:
  • 2 cups powdered sugar
  • 8 tablespoons earth balance margarine
  • 1/4 cup soy milk/almond milk (I used warm water)
  • 1/4 cup unsweetened cocoa powder
  • 3 teaspoons vanilla extract + 1 teaspoon almond extract


For Cake:Pre-heat oven to 350 degrees. Place Bundt Mold on Perforated Baking SheetIn mixing bowl, mix dry ingredients well and then add the water, vanilla, oil and vinegar. Stir until well combined. Bake at 350 degrees for 35-37 minutes.Allow cake to cool completely before flipping out onto serving your platter. I place my platter on top of the cake, flip and then gently pull off the flexipan mold. VOILA!! Don’t forget you won’t need to flour oil or spray them! Woo-hoo!For Glaze:Combine all glaze ingredients and whiz in juicer or blender. If needed for consistency, add a little more sugar or milk. Pour the glaze over cake.Variation:For the cake, try coconut oil for the 1/3 c vegetable oil and instead of warm water, a cup of coffee + a cup of Kahlua. For the glaze, try Kahlua for your liquid.
