Veggie and Prosciutto Herbed Pizza

Recipe by You can top this with any leftover roasted veggies you have on hand. Serve along with a giant green salad and enjoy pizza even when watching your food intake!

Ingredients:


  • 2 tbsp DAH basil olive oil
  • 1 DAH herbed pizza crust prepared or whole wheat crust
  • 1 & ½ cups butternut squash, cubed
  • 5 Brussels sprouts, cut in half
  • ¾ cup ricotta
  • 6 slices prosciutto, torn
  • ½ cup grated Parmesan cheese

Directions:


Roll out crust and place on Silpat. Brush the crust with 1 tbsp of basil oil. Chop the squash and sprouts in the eco chop until uniform in size. Toss veggies with remaining basil oil. Top dough with ricotta dollops, veggies and prosciutto. Bake at 450 degrees, topping with parmesan halfway through, until crust is crispy, about 15 minutes. Adapted from Rachael Ray
