Zesty Southwest Spaghetti Squash

  • spaghetti squash
  • olive oil
  • sel gris salt from Demarle at Home
  • pepper
  • 2c cooked chicken, cubed
  • 1 c tomatoes, chopped
  • 1c rinsed canned black beans
  • 1/2c cheddar cheese
  • 1T zesty seasoning from Demarle at Home


Cut the spaghetti squash in half. Spritz with olive oil, sprinkle Sel Gris and pepper. Bake "open side" down for 30 minutes at 425. Mix the zesty seasoning with the cheddar cheese. Mix the chicken, tomatoes and beans in a bowl. When spaghetti squash is cooked, let sit for five minutes, then gently scrape insides into bowl. Add the chicken mixture. Fill the empty squash shells with the mixture. Cover with cheese. Bake for 5 minutes more.
