Zucchini Bread

Recipe by My mom got this recipe from her sister in law "years ago" . We've been using it since. I recently tried a small amount of the blood orange olive oil. It added a nice flavor and aroma. This bread freezes well also.

Ingredients:


  • 2 cups grated, unpeeled zucchini
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp cinnamon
  • 3 tsp vanilla
  • 1 cup vegtable oil (I used 1/4 cup DAH blood orange and 3/4 cup veg. oil)

Directions:


Mix all ingredients until well combined. Bake in 350 degree preheated oven for 45 minutes--1.5 hours, depending on pan size. Works well in the large loaf tray and fluted loaf mold.
