Zucchini Cake

Ingredients:


  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon Sel Gris Sea Salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups shredded zucchini
  • 1/2 cup chopped walnuts

Directions:


1. Preheat oven to 350 degrees F, place rack in center of oven. Place Flexipan® Christmas Tree Tray on Perforated Baking Sheet and set aside.

2. In mixing bowl, combine flour, sugar, cinnamon, salt, baking powder, and baking soda. Add oil and eggs in another mixing bowl, whisk until smooth. Add egg mixture to dry ingredients and mix well. Add zucchini and fold in walnuts.

3. Fill each well 2/3 full. Bake for 30-45 minutes or until toothpick comes out clean. Top with cream cheese frosting is desired
