Zucchini Pasta Salad

Recipe by Pecans may be toasted on the Silpat if you wish. Use the Eco Chopper to chop the pecans if using whole pieces. This is a simple side dish, or make it more of a meal by adding grilled chicken or shrimp.

Ingredients:


  • 2 zucchini
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped pecans
  • 2 Tablespoons fresh basil
  • 4 Tablespoons olive oil
  • 2 Tablespoons DAH Traditional Balsamic Vinegar
  • 2 cloves garlic, minced

Directions:


Using the Y peeler from the DAH Snap & Peel Trio, peel the zucchini into long strips. In a large bowl, combine tomatoes, garlic, pecans, basil, and oil. Toss with zucchini strips and garnish with basil.
