Zucchini Steak Fries

Recipe by These are remarkably tasty! Great way to encourage your family to eat more veggies! AND...a great way to eat up all those zucchinis filling your garden. You amazing gardener you!!! NOTE: You can make your own crumbs from GLUTEN FREE bread and substitute easily!


  • 6 medium zucchini - washed, halved lengthwise and then horizontally into Steak Fry portions.
  • 1/4 cup butter or coconut oil
  • 2 garlic cloves, minced
  • One box Panko Crumbs or 4 cups Plain/Italian Bread Crumbs.
  • 1/2 cup Parmesan Cheese, grated
  • 4 eggs, beaten
  • 1 tablespoon DAH Spiced Apple Pear Balsamic Vinegar
  • 1/2 teaspoon DAH Sel Gris Sea Salt
  • Freshly ground pepper to taste.


Melt 1/4 cup butter or coconut oil in sauté pan with medium heat. Add minced garlic, cooking and stirring for 2 more minutes. Add Panko Crumbs or Plain/Italian Bread Crumbs. Cook until nicely golden. Stir often to avoid over browning crumbs.Set browned crumbs aside to cool slightly. Mix in Parmesan cheese.Place Large Silpat or Deep Flexipat on Perforated Baking Sheet. In shallow dish beat eggs. Add balsamic vinegar, sea salt freshly ground pepper. Beat well.Dredge zucchini in egg mixture and then coat with prepared bread crumbs.Lay pieces close to each on Silpat, do not allow to touch.Bake at 425 Degrees for 10 -15 minutes depending on sizes. No need to flip or turn food when using SILPAT/FLEXIPAN - YAY!!!Sprinkle lightly with additional sea salt if desired.
